Shortly after harvesting and processing, fish is quickly vacuum packed to flush out all the gas and air from the plastic pouch. Foods maintain their fresh flavour, texture and appearance 3-5 times longer in vacuum packing than with conventional storage methods.  This is because microorganisms such as bacteria, mold and yeast cannot grow without oxygen. Vacuum packing prevents freezer burn, because foods no longer become dehydrated from contact with cold, dry air. The natural moisture in fish won't dry out, because there's no air to absorb the moisture from the food.
